Plant-Based Cherry Ice Cream with Salted Caramel
I recently filmed a Facebook Live with Feelunique to round off their Earth Month series #EarthMonthLIVE, where I made a healthy Cherry Ice Cream with a Salted Caramel Peanut Butter Sauce that’s 100% plant-based and refined sugar free.
I love the recipe so much I wanted to post it on here for you to refer back to – I already know this is going to be one of my Summer staples!
It makes a wonderful dessert for those times you have friends and family over for dinner (or even just for yourself!) but as there are no nasty ingredients, it’s totally acceptable to make this for breakfast too. I like to add a plant-based protein powder, making it an ideal post-workout treat.

Cherry Ice Cream with Salted Caramel
– Plant-Based and Refined Sugar Free
– Serves 4
Peanut Butter Salted Caramel:
2 tbsp Smooth Peanut Butter
2 tbsp Maple Syrup
4 tbsp Water
Pinch Sea Salt
Cherry Ice Cream:
4 Frozen Bananas
3 Handfuls Frozen Cherries
2 Dates, pitted
2 Scoops Vanilla Plant Protein Powder
2 tbsp Berry Powder, I used Radiance by Neal’s Yard Remedies
Water or Almond Milk to blend
- In a small bowl, whisk the peanut butter salted caramel ingredients together with a fork, adding more water to achieve the desired consistency and set aside.
- Add all the ice cream ingredients to a blender or food processor and blend until smooth, adding more liquid a bit at a time if you need it.
- Scoop the ice cream into small bowls with any toppings of your choice and drizzle with the caramel sauce. Blackberries or fresh cherries work well here and a sprinkle of desiccated coconut.
