Chocolate + Banana Chia Pudding
I have some exciting news! Eat Smart is now available in the USA! My book was first published in September last year in the UK and due to the success I can finally announce that today it will be launched in the states in Barnes & Noble * and on Amazon *. I can barely control my excitement after waiting patiently for months!
So to celebrate, I thought I would share with you one of my favourite recipes from the book. This is my Chocolate and Banana Chia Pudding. It is very similar to a chocolate mousse, but is entirely plant-based and made from all natural, healthy ingredients. It’s so good I have even occasionally made it for breakfast! Who doesn’t want a chocolate mousse for breakfast?
It’s quick and easy to make with simple ingredients. Perfect to whizz up for friends after a dinner party… They’ll never know it’s made from bananas and avocado. That can be our little secret.

CHOCOLATE + BANANA CHIA PUDDING
2 tbsp chia seeds
1 ripe banana, peeled
3 medjool dates, pitted
1/2 ripe avocado, peeled and stoned
2 tbsp cacao powder
125ml (1/2 cup) unsweetened almond milk (or other non dairy milk)
- Soak the chia seeds with 6 tablespoons of water in a small bowl and refrigerate for about 20 minutes.
- Put all the ingredients apart from the soaked chia seeds into a blender and whizz until smooth.
- Stir in the soaked chia seeds and pour the mixture into two bowls or glasses. Top with your choice of toppings and tuck in.
TIP – if you prefer a smoother consistency blend the chia seeds too.

Fresh passion fruit
Sprinkling of coconut flakes
Dusting of cacao powder
